Potato and Green Bean Casserole

  • 1 pound potatoes, peeled and diced
  • 1 1/2 cups canned green beans, drained
  • 1 teaspoon garlic, minced
  • 1 tablespoon oregano
  • 3/4 cup parmesan cheese, grated
  • 1/4 cup ricotta cheese
  • 1/4 cup olive oil
  • 4 eggs, beaten
  • 1 cup breadcrumbs
  • 1/2 cup milk
DIRECTIONS
  1. Preheat oven to 350 degrees. Boil theh potatoes until soft, drain and mash. Chop the green beans. Mix together the potatoes, beans, garlic, oregano, ricotta, oil and eggs. Place the mixture in a lightly greased 12" cake pan. Mix together the milk and breadcrumbs. Spread the crumbs over the mixture. Bake for 40 minutes or until lightly browned. Serve warm.
