Potatoes Italiano

  • 1 package Betty Crocker au gratin potatoes
  • 2 cups cut-up cooked turkey or chicken (ham would work, too)
  • 1/2 cup chopped green pepper
  • 1/2 cup chopped onion
  • 2 1/2 cups boiling water
  • 2/3 cup milk
  • 3 Tbsp Dijon mustard
  • 2 Tbsp butter
  • 1 tsp dried oregano leaves
  • 1 tsp dried basil leaves
  • 1/4 tsp pepper
  • 1 clove garlic, crushed or grated
  • 2 cups grated mozzarella cheese (about 8 ounces)
DIRECTIONS
  1. Heat oven to 400 degrees.
  2. Place the potato slices and Sauce Mix in ungreased 2 quart casserole or 9 x 13 " cake pan.
  3. Stir in all remaining ingredients except the cheese.
  4. Bake uncovered until potatoes are tender and mixture is hot, about 25 to 30 minutes.
  5. Sprinkle with cheese; bake until cheese is melted, about 5 minutes longer.
  6. Let stand a few minutes before serving.

I cut this casserole recipe out of a newspaper many years ago. It is an easy-to-make main dish that starts with a box of Betty Crocker au gratin potatoes.
