Pound Cake Loaf

  • 3 cups cake flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground nutmeg
  • 1 1/2 cups sugar
  • 1 cup (2 sticks) butter, softened
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1/2 cup evaporated milk
  • 3/4 cup chopped walnuts or pecans,optional
DIRECTIONS
  1. Preheat oven to 350 degrees F. Grease 9 x 5-inch loaf pan.
  2. Combine flour, baking powder, salt and nutmeg in medium bowl. Beat sugar, butter and vanilla extract in large mixer bowl until light and fluffy. Add eggs one at a time, beating well after each addition. Beat in flour mixture alternately with evaporated milk. Pour into prepared loaf pan; sprinkle with nuts.
  3. Bake for 60 to 70 minutes or until toothpick inserted in center comes out clean. Cool in pan for 10 minutes; remove to wire rack to cool completely.
