Pound Cake

  • Lightly grated rind of 1 lemon
  • 1 lb sugar
  • 1 level tsp mace
  • 1/4 tsp salt
  • 1 LB butter
  • 12 eggs
  • 1 lb flour
DIRECTIONS
  1. Grate lemon rind onto the sugar, mace, and salt. Then, mix with butter and sugar until light and creamy.
  2. Add eggs, two at a time, beating well.
  3. Then, add flour, mixing in lightly but fully.
  4. Put mixture into well-greased paper-lined pans. (note: pan sizes are not indicated in this recipe)
  5. Bake at 250 degrees for 1 1/2 hours, testing with straw toward the end of baking.
