Prickly Pear Candy

  • 1 cup pureed prickly pear cactus fruit (peeled and de-seeded)
  • 3 cups applesauce, sugar free
  • 6 tsp pectin
  • 5 cups sugar plus more for dredging
  1. Scoop prickly pear flesh from the skin and place in blender; puree.
  2. Strain prickly pear puree to remove seeds and add to a large saucepan
  3. Add applesauce to puree
  4. In a separate bowl, add pectin and one cup of the sugar and whisk together
  5. Add to fruit puree and bring to a boil
  6. Add in the remaining sugar and bring back up to a boil
  7. Stir constantly until your thermometer reaches 225°
  8. Remove from heat and pour into a greased 13x9 pan
  9. Let cool about an hour and sprinkle with sugar
  10. Let dry over night (or around 12 hours)
  11. Cut into one inch squares
  12. Add sugar to a baggie and add a few pieces at a time to cover with sugar
  13. Place on parchment paper and let dry for six hours (or preferably 1-2 more days, turning occasionally)
  14. Store for up to two weeks
Prickly Pear fruit grows all over the West and Southwest. I think people don't realize how good and beneficial this fruit is so I created a fun recipe using the puree for everyone to try.
