Protein Packed Quinoa Lentil Veggie Salad
INGREDIENTS

  • 1 cucumber chopped
  • 1 large tomato chopped
  • 1 bell pepper
  • 1/2 c cooked lentils
  • 1/2 c quinoa cooked
  • 1 cup of leafy greens
  • sprinkle of feta cheese (if not vegan)
  • Dressing:
  • 1/4 c olive oil
  • 1 garlic clove
  • juice of half a lemon
  • 1 tbsp italian seasoning
  • 1/4 tsp himalayan sea salt
  • OR...
  • 1 serving of Lemony Garlic Tahini Dressing
DIRECTIONS
  1. Cook lentils and quinoa according to their directions and toss with rest of ingredients. Add celtic/himalayan sea salt to taste.

I love this recipe!! It keeps well, and is great cold or warm. It's a super simple and adaptable recipe that works great with any veggies you have laying around. It's hearty and super delish, my roommates couldn't even tell it was actually incredibly healthy!
