INGREDIENTS

- 1 cucumber chopped
- 1 large tomato chopped
- 1 bell pepper
- 1/2 c cooked lentils
- 1/2 c quinoa cooked
- 1 cup of leafy greens
- sprinkle of feta cheese (if not vegan)
- Dressing:
- 1/4 c olive oil
- 1 garlic clove
- juice of half a lemon
- 1 tbsp italian seasoning
- 1/4 tsp himalayan sea salt
- OR...
- 1 serving of Lemony Garlic Tahini Dressing
DIRECTIONS
- Cook lentils and quinoa according to their directions and toss with rest of ingredients. Add celtic/himalayan sea salt to taste.
