Pulled Chicken Sandwiches (Crock Pot)

  • 1 medium onion or 1/2 large onion
  • 3 boneless, skinless chicken breasts
  • Sauce
  • 1 cup catsup
  • 2 Tbsp cider vinegar
  • 2 Tbsp molasses
  • 1 Tbsp Worcestershire sauce
  • 1 Tbsp yellow mustard
  • 1/4 tsp pepper
  • 1 tsp onion pepper
  • 1/4 tsp cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp Tabasco sauce
  • 1/2 tsp salt
  1. Cut the onion in half and slice into thin rings. Line the bottom of the crock pot wit the onions.
  2. Trim the chicken breasts and place on top of the bed of onions.
  3. Mix all sauce ingredients together and pour on top of the chicken covering completely. (You can make the sauce the night before so that it can be quickly added in the morning.)
  4. Cook for 6 to 8 hours on low setting. The sauce will thicken and turn brown during cooking. At the same time, the onions will dissolve into the sauce.
  5. When the chicken is falling apart tender, remove it from the sauce.
  6. Take two forks and shred the chicken. Put it back into the sauce and serve.
I have made this several times for large parties when I am also making sloppy Joe's or pulled pork sandwiches. It is a lighter alternative to the pork and beef, and it is very flavorful. This recipe can easily be doubled if you have a larger crockpot, and any left overs can be frozen. As written, this recipe is mild enough for kids; it can be spiced up by adding more Tabasco or by adding a chopped chipotle pepper in adobo.
