Pumpkin Cheesecake Bars

INGREDIENTS
  • 3 cups graham cracker crumbs
  • 1/2 cup sugar
  • 3/4 cup butter -- melted
  • 6 eggs -- beaten
  • 2 1/4 cups sugar
  • 19 ounces cream cheese
  • 2 cups pumpkin
  • 1/2 cup sugar
  • 1 teaspoon cinnamon
  • 1/2 cup milk
  • 3 egg yolks -- save whites
  • 1 package Knox Gelatin
  • 1/4 cup hot water
  • 1/4 cup sugar
DIRECTIONS
  1. Mix first three ingredients together and put in a 9 x 13 pan.
  2. Beat together the next three ingredients and pour over first layer. Bake at 350° for 40 minutes or until set in middle.
  3. In a medium saucepan, combine the pumpkin, sugar, cinnamon, milk and egg yolks. Cook, stirring constantly until thick. Remove from heat. Add the gelatin that has been dissolved in the 1/4 cup hot water. Cool. Beat egg whites until stiff. Add 1/4 cup sugar. Fold into cooled pumpkin mixture. Pour over 2nd layer. Top with whipped cream.
