Pumpkin Chess Pie

  • 1 9-inch deep dish pie crust
  • 1 1/2 c granulated sugar
  • 2 Tbsp. cornmeal
  • 1/2 tsp pumpkin pie spice
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp salt
  • 1 c pumpkin, not pumpkin pie filling
  • 1/2 c half and half
  • 1/2 c melted butter
  • 2 lg eggs
  • 1 tsp vanilla extract
  1. Preheat the oven to 350F. Then, mix together dry ingredients. Set aside. Beat together the pumpkin, half and half, and melted butter., Add the eggs, one at a time, and mix well. Next, add the vanilla extract. Gradually mix in the dry ingredients until combined. Prick a 9-inch deep dish pie crust in several places with a fork. Pour the filling into the crust. Put a pie shield or foil over the crust. Bake for 30 minutes. Then remove the pie shield or foil. Bake for another 25 - 30 minutes. It is done when the center has risen. Set on the counter until cool.
