Pumpkin Chess Pie

- 1 9-inch deep dish pie crust
- 1 1/2 c granulated sugar
- 2 Tbsp. cornmeal
- 1/2 tsp pumpkin pie spice
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp salt
- 1 c pumpkin, not pumpkin pie filling
- 1/2 c half and half
- 1/2 c melted butter
- 2 lg eggs
- 1 tsp vanilla extract
DIRECTIONS
- Preheat the oven to 350F. Then, mix together dry ingredients. Set aside. Beat together the pumpkin, half and half, and melted butter., Add the eggs, one at a time, and mix well. Next, add the vanilla extract. Gradually mix in the dry ingredients until combined. Prick a 9-inch deep dish pie crust in several places with a fork. Pour the filling into the crust. Put a pie shield or foil over the crust. Bake for 30 minutes. Then remove the pie shield or foil. Bake for another 25 - 30 minutes. It is done when the center has risen. Set on the counter until cool.
