Pumpkin Chocolate Chip Muffins

  • 1/2 cup sliced, unblanched almonds
  • 1 2/3 cup flour
  • 1 cup sugar
  • 1 Tablespoon pumpkin pie spice
  • 1 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1 cup plain pumpkin
  • 1/2 cup butter, melted
  • 1 cup chocolate chips
DIRECTIONS
  1. Heat oven to 350. Put almonds on cookie sheet & bake about 5 mins, cool.
  2. Grease muffin cups.
  3. Mix flour, sugar, pie spice, baking soda, baking powder & salt in large bowl.
  4. Break eggs into another bowl.
  5. Add pumpkin and butter & whisk until well blended. Stir in chocolate chips & almonds.
  6. Pour over dry ingredients and fold in with rubber spatula just until dry ingredients are moistened. Scoop batter evenly into muffin cups.
  7. Bake 20-25 mins.
  8. Makes 1 doz

These muffins are a family favorite we usually have them at thanksgiving but they're a good snack anytime. Unlike most muffins, these actually taste better the next day.
