Pumpkin Harvest Cake

INGREDIENTS
  • 15 oz can of pumpkin
  • 4 eggs
  • 3/4 cup veg. oil
  • tsp. Vanilla
  • 2 cups of flour
  • 2 cups of sugar
  • 1 tbsp pumpkin pie spice
  • 2 tsp. ground cinnamon
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • Frosting
  • 6 tbsp butter softened
  • 1 tsp vanilla
  • 1/8 tsp salt
  • 2 oz package cream chees
  • 1 tsp milk
  • 2 cups powdered sugar
DIRECTIONS
  1. For cake - Beat together: Pumpkin,eggs,oil,vanilla
  2. Combine dry ingredients
  3. Stir together
  4. In greased pan bake 25-30 minutes at 350 degrees
  5. For Frosting - In small bowl mix:sugar,cream cheese, butter
  6. Add powdered sugar
  7. Store in fridge
RECIPE BACKSTORY
This recipe was given to me by my boyfriend's mother. It is the best cake I have ever tasted. The cake stayed moist and soft for a week after it was made.
