Pumpkin Nutty Muffins

INGREDIENTS
  • 3 c. flour
  • 2 t. baking soda
  • 2 t. baking powder
  • 1 t. cinnamon
  • 1 t. salt
  • 4 eggs
  • 1 1/2 c. granulated sugar
  • 1-15 oz. can pumpkin
  • 1 1/2 c. vegetable oil
  • 1 c. chopped nuts
  • Topping:
  • 1/4 c. all-purpose flour
  • 1/4 c. granulated sugar
  • 2 T. butter
  • 1 t. cinnamon
DIRECTIONS
  1. In a medium bowl, sift together flour, baking soda, baking powder, cinnamon and salt; set aside.
  2. In a large bowl, beat together eggs, sugar, pumpkin and oil until smooth.
  3. Add dry mixture to pumpkin mixture and stir well. Fold in nuts.
  4. Grease muffin tins or line with paper.
  5. Fill muffin tins 3/4 full with batter; set aside. In a medium-mixing bowl, combine topping ingredients, mixing well with a fork.
  6. Spoon a small amount of topping on each muffin. Bake at 400° for 17-20 minutes. Makes 24 muffins
