Pumpkin Oatmeal Cookies
INGREDIENTS
- 4 C. flour
- 2 C. oatmeal
- 2 tsp. baking soda
- 2 tsp. cinnamon
- 1 tsp. salt
- 1 1/2 C. butter or margarine, softened
- 2 C. brown sugar
- 1 C. granulated sugar
- 1 egg
- 1 tsp. vanilla
- 1 (16 oz.) can solid pumpkin
- OPTIONAL:
- 1 Cup of raisins, chocolate chops or nuts.
DIRECTIONS
- PUMPKIN OATMEAL COOKIES
- 4 C. flour
- 2 C. oatmeal
- 2 tsp. baking soda
- 2 tsp. cinnamon
- 1 tsp. salt
- 1 1/2 C. butter or margarine, softened
- 2 C. brown sugar
- 1 C. granulated sugar
- 1 egg
- 1 tsp. vanilla
- 1 (16 oz.) can solid pumpkin
- Preheat oven to 350 degrees.
- combine first 5 ingredients, set aside.
- Cream butter, gradually add sugars,mix until light and fluffy.
- Add egg and vanilla, mix well.
- Alternate dry ingredients and pumpkin mixture.
- Mix well after each addition.
- OPTIONAL: you may add 1 Cup of raisins, chocolate chops or nuts.
- Drop by tablespoon onto lightly greased cookie sheet.
- Bake for approximately 14 minutes until firm and lightly browned.
