Pumpkin Parfait
  • 1 big can of Libby Pumpkin
  • Cinnamon to taste
  • Nutmeg to taste
  • Brown sugar to taste
  • Fat free whipped topping
  • Crushed graham crackers (I use the sugar free ones, but any will do)
  1. Mix cinnamon, nutmeg, pumpkin, and brown sugar together. Alternate layers in a clear cup of pumpkin, whipped topping, and graham crackers (my sons love to do this themselves and then swirl it all together).
This is a kid version of pumpkin pie, but my kids hate pie crust, so we put it into clear glasses so they can see the layers and they love it.
