Pumpkin Pecan Cupcakes
  • 1 pkg spice cake mix
  • 1 15 oz can solid-pack pumpkin
  • 3 eggs
  • 1/2 cup vegetable oil
  • 1 tbs cinnamon
  • 1 tsp baking soda
  • 1/4 tsp ground cloves
  • 24 pecan halves
  • ground cinnamon
  1. In a large mixing bowl, combine spice cake mix, pumpkin, eggs, oil, cinnamon, baking soda and cloves. Beat on medium for 2 minutes. Fill paper lined cups and press i pecan half into each. Bake at 350 degrees for 22-26 minutes. Cool five minutes in pan, move to wire rack and cool completely. Frost with your favorite cream cheese frosting and sprinkle cinnamon on top.
