Pumpkin Pecan Pie

  • Pumkpin Layer
  • 1 unbaked pie crust
  • 1c. pure pumkpin
  • 1/3c. sugar
  • 1 large egg
  • 1tsp pumpkin pie spice
  • Pecan Layer
  • 2/3c. light corn syrup
  • 1/2c. sugar
  • 2 large eggs
  • 3tbsp butter, melted
  • 1/2 tsp vanilla extract
  • 1 1/2c. pecan halves
  1. Preheat oven to 350 F.
  2. Place pie crust in 9in pie pan.
  3. Pumpkin layer:
  4. Combine pumpkin, sugar, egg, and pumpkin pie spice in medium bowl, stir well. Spread over bottom of pie shell.
  5. Pecan layer:
  6. Combine corn syrup, eggs, butter, and vanilla extract in same bowl. Stir in nuts. Spoon over pumpkin layer.
  7. Bake for 50 min or until knife inserted in center comes out clean. Cool on wire rack.
Pumpkin pie and pecan pie are my favorites and I love that this pie is both in one! My friends and family want me to make this all the time and I love to because it is so easy to make and clean up is a breeze. Its also delicious!
