Pumpkin Soup
INGREDIENTS
  • Cooking Time: 60 minutes
  • 6 cups chicken broth
  • 4 cups pumpkin puree
  • 1 teaspoon basil
  • 1/2 teaspoon thyme
  • 1 1/2 teaspoons salt
  • Black pepper to taste
  • 1 diced onion
  • 2 cloves diced garlic
  • 1/2 cup heavy cream
DIRECTIONS
  1. Cook all ingredients EXCEPT heavy cream for 30 minutes.
  2. Blend with stick blender or blend one cup at a time.
  3. Add 1/2 cup heavy cream and cook for 30 more minutes.
