Pumpkin Squares

INGREDIENTS
  • 4 eggs
  • 1-2/3 c. sugar
  • 1 c. oil
  • 1-15oz. can pumpkin
  • 2 c. flour
  • 2-1/2 t. baking powder
  • 2 t. cinnamon
  • 1-1/2 t. baking soda
  • 1 t. salt
  • 1/2 c. chopped nuts
  • FROSTING:
  • 1 (3oz) cream cheese
  • 2 c. confectioners sugar
  • 1/2 c. butter
  • 1/2 c. chopped nuts
  • 1 t. vanilla
DIRECTIONS
  1. Beat eggs, sugar, oil and pumpkin until fluffy.
  2. Stir in all dry ingredients. Mix thoroughly.
  3. Bake in an ungreased 15 x 10 inch pan @ 350
  4. for 30-35 minutes. Cool and frost.
  5. For frosting, cream the softened cream cheese
  6. and vanilla. Add confectioners sugar. Beat
  7. well until smooth. Frost and sprinkle nuts
  8. on top.
