Pumpkin poppers

INGREDIENTS
  • 1/3 cup butter (preferably unsalted)
  • 2/3 cup honey
  • 2 eggs
  • 1 cup canned pumpkin
  • 1/2 cup unsweetened applesauce
  • 2 teaspoons vanilla extract
  • 3 cups whole wheat pastry flour
  • 3 teaspoons cinnamon
  • 3 teaspoons allspice
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
DIRECTIONS
  1. Preheat oven to 350.
  2. Grease or spray cookie sheets with non-stick spray.
  3. Whisk together until well blended and creamy butter and honey.
  4. Whisk in thoroughly eggs, pumpkin, applesauce (look at ingredients label), and vanilla extract.
  5. Blend dry ingredients in separate bowl; whole wheat pastry flour, cinnamon, allspice, baking powder, baking soda, and salt.
  6. Whisk dry ingredients into liquid ingredients, blending well. Dough will be soft.
  7. Drop tablespoons of dough or dispense with all-purpose scoop onto lightly greased cookie sheet, allowing at least an inch between.
  8. Bake in preheated oven at 350 for 15 minutes until lightly browned.
  9. Remove cookies immediately from sheet to cool.

Found this in my sue gregg desserts book. it is made with whole wheat flour, honey, and applesauce so it is better for you then some desserts. they are called cookies but i think they are more like little cakes.
