Quick Kielbasa Skillet Dinner
INGREDIENTS

  • Preparation Time: 20 minutes
  • 3 lbs. Kielbasa (regular, turkey, or skinless) sliced into bite-sized wedges
  • 1 green or red bell pepper or combination chopped
  • 6-8 medium potatoes, peeled and cubed
  • 1/2-1 cup sweet onion chopped (or more to taste)
  • 3-4 Tbsp. olive oil or margarine
  • 1/2 cup water
DIRECTIONS
  1. Chop onion and bell pepper. Set aside.
  2. Peel and cube potatoe.
  3. Heat olive oil or margarine in non-stick electric skillet on 325 degrees.
  4. Add potatoes and water. Cook for about 5-10 munutes.
  5. Add pepper and onions. Cook for about 5 muinutes.
  6. Add Kielbasa wedges and cook all ingredients together for 10-15 minutes.
  7. Serve hot.
RECIPE BACKSTORY
My mom used to make this. There were four of us kids, always on the go, and this was quick and easy. This reheats well also. Vegetables can be cut up ahead of time. Diced potatoes should be stored covered in cold water at room temperature until ready to use (24 hours or less).
