Quick Quesadillas
INGREDIENTS
- 2 large flour tortillas
- Either pre-packaged grilled chicken strips or leftovers
- 1 bag of Mexican blend shredded cheese (for with the other cheddar cheese bags in the grocery store)
- 1 heaping Tbsp of sour cream
- Chili powder to taste
- Salsa
DIRECTIONS
- On your stove, heat a large skillet to med. high heat.
- In the meantime, mix the sour cream with a good amount of chili powder. This is something very subject to how spicy you like it. I usually get my sour cream to about a peachy-beige color.
- Spread the sour cream on 1 tortilla
- Place the tortilla sour cream side up in the skillet, top with chicken, a good amount of cheese and your favorite salsa (optional). Put the other tortilla on top.
- Let it cook for about 1-2 minutes or until the tortilla is slightly crispy and just starting to turng golden brown in spots. Flip and repeat.
- Cut into 4ths or 8ths and enjoy!
