Quick weeknight pasta
  • Cooking Time: 10 minutes
  • Servings: 4
  • Preparation Time: 15 minutes
  • 1 box Whole wheat spaghetti
  • Two tblsp butter
  • 1 cup grated parmesan
  • 1 bunch asparagus, trimmed & cut into thirds
  • salt & pepper to taste
  1. Cook pasta in boiling salted water for 10 minutes;
  2. While pasta is cooking, trim ends from asparagus, cut asparagus into three sections and saute in butter;
  3. When pasta is al dente, place into large bowl with butter and 1/2 cup pasta water;
  4. Toss pasta with grated parmesan;
  5. Add asparagus and salt and pepper to taste;
  6. Serve to a happy family with crusty bread!
This recipe is one my grandmother made when I was a child, and is a quick and delicious way to feed the important people in my life on those nights that time and energy is short!
