Quickie Quiche
INGREDIENTS
  • Servings: 1
  • 4 egg whites
  • 1/4 c. fat free cottage cheese
  • 1/8 cup shredded soy cheese
  • 2 tbp. Chunky Mild Salsa
  • Chopped Spinach
  • Chopped Turkey Bacon
  • 2 oz. or 1/4 c. Almond Milk
  • half a toasted English Muffin
DIRECTIONS
  1. 1. Place toasted English Muffin on bottom of a bowl
  2. 2. In a separate bowl, mix all ingredients pour on top of English muffin and heat
  3. for 1 minute on high or until done, use a toothpick to check
  4. Got more time available, say a Sunday? Bake at 350 degrees for 45 minutes. No need to toast the muffin
