Quinoa Salad
CATEGORIES
INGREDIENTS
  • 1 c. quinoa
  • 1 bouillion cube
  • 2 cp water
  • 1 can black beans, rinsed
  • 1 c. frozen corn, rinsed, or 1 can corn without sugar, or fresh corn sliced off the cob
  • 1 large sweet pepper (whichever color you like)
  • 1/2 bunch of parsley or cilantro, chopped
  • salt and black pepper to taste
  • drizzle of olive oil
  • 1-2 lemons or limes, to taste
  • Mix throughly, add quinoa, mix some more, and ENJOY!
DIRECTIONS
  1. Toast quinoa in olive oil with salt and a bouillion cube for about a minute.
  2. Add 2 c. water, cover and simmer until water is absorbed. Cool before adding to the veggies.
  3. Add: black beans, corn, peppers, fresh herbs, salt and black pepper, olive oil.
  4. Mix.
  5. Squeeze 1-2 lemons or limes, to taste
  6. Mix throughly, add quinoa, mix some more, and ENJOY!
