Quinoa Salad

INGREDIENTS
- 1 c. quinoa
- 1 bouillion cube
- 2 cp water
- 1 can black beans, rinsed
- 1 c. frozen corn, rinsed, or 1 can corn without sugar, or fresh corn sliced off the cob
- 1 large sweet pepper (whichever color you like)
- 1/2 bunch of parsley or cilantro, chopped
- salt and black pepper to taste
- drizzle of olive oil
- 1-2 lemons or limes, to taste
- Mix throughly, add quinoa, mix some more, and ENJOY!
DIRECTIONS
- Toast quinoa in olive oil with salt and a bouillion cube for about a minute.
- Add 2 c. water, cover and simmer until water is absorbed. Cool before adding to the veggies.
- Add: black beans, corn, peppers, fresh herbs, salt and black pepper, olive oil.
- Mix.
- Squeeze 1-2 lemons or limes, to taste
- Mix throughly, add quinoa, mix some more, and ENJOY!
