Quinoa pizza bites

- Cooking Time: 15-20 minutes
- Servings: 10-15 mini muffins
- Preparation Time: 10 minutes
- 1 cup quinoa
- 2 large eggs
- 1 cup chopped onion
- 1 cup shredded mozzarella
- 2 tsp dried basil
- 1/2 cup cherry tomatoes diced
- 1/2 tsp salt
- 1 tsp paprika
- 1 tsp dried oregano
DIRECTIONS
- Place quinoa in 2 cups of water in covered pot bring to a boil and then simmer for 20 mins or until quinoa is tender
- preheat oven to 350
- mix all ingredients together except pizza sauce
- bake in a mini muffin tin for 15-20 mins
- dip in pizza sauce!
