Quinoa pizza bites

  • 1 cup quinoa
  • 2 large eggs
  • 1 cup chopped onion
  • 1 cup shredded mozzarella
  • 2 tsp dried basil
  • 1/2 cup cherry tomatoes diced
  • 1/2 tsp salt
  • 1 tsp paprika
  • 1 tsp dried oregano
DIRECTIONS
  1. Place quinoa in 2 cups of water in covered pot bring to a boil and then simmer for 20 mins or until quinoa is tender
  2. preheat oven to 350
  3. mix all ingredients together except pizza sauce
  4. bake in a mini muffin tin for 15-20 mins
  5. dip in pizza sauce!
