  • Potatoes
  • Butter or oil
  • Salt
  • Pepper
  1. Boil potatoes in jacket.
  2. Keep at least 2 to 3 days so they won’t be mushy.
  3. Heat butter or oil in large frying pan until sizzling hot.
  4. Peel the potatoes.
  5. Grate potatoes onto plate, using a large-hole grater (not the onion kind).
  6. Add salt and pepper to taste.
  7. Put into hot skillet.
  8. Stir once to mix and heat the fat.
  9. Cover with plate.
  10. Turn fire low.
  11. Cook about 20 minutes without stirring.
  12. Turn out onto hot plate.
Rösti are Swiss hash browns. Boil potatoes 2 or 3 days before use.
