RICE, ARTICHOKE AND SHRIMP SALAD

INGREDIENTS
  • 1 pkg. chicken flavor rice mix
  • 4 green onions, thin sliced
  • 1/2 green pepper, chopped
  • 12 pimento olives, sliced
  • mayonnaise
  • 2 (6 oz.) jars marinated
  • artichoke hearts
  • 3/4 tsp. curry powder
  • 2 lb. shrimp, boiled, deveined
  • and cleaned
DIRECTIONS
  1. Cook rice as directed on package, omitting butter. Cool
  2. in large bowl. Add onions, green peppers and olives. Drain
  3. artichokes, reserving marinade. Halve or quarter hearts if
  4. necessary. Combine artichoke marinade with curry powder and
  5. mayo. Add artichoke hearts to rice salad and toss with dress-
  6. ing. Chill. This part can be made the day ahead. Add shrimp
  7. 2 to 3 hours before serving.
