RICE, ARTICHOKE AND SHRIMP SALAD

INGREDIENTS
- 1 pkg. chicken flavor rice mix
- 4 green onions, thin sliced
- 1/2 green pepper, chopped
- 12 pimento olives, sliced
- mayonnaise
- 2 (6 oz.) jars marinated
- artichoke hearts
- 3/4 tsp. curry powder
- 2 lb. shrimp, boiled, deveined
- and cleaned
DIRECTIONS
- Cook rice as directed on package, omitting butter. Cool
- in large bowl. Add onions, green peppers and olives. Drain
- artichokes, reserving marinade. Halve or quarter hearts if
- necessary. Combine artichoke marinade with curry powder and
- mayo. Add artichoke hearts to rice salad and toss with dress-
- ing. Chill. This part can be made the day ahead. Add shrimp
- 2 to 3 hours before serving.
