RICE ARTICHOKE SALAD

INGREDIENTS
  • 1 pkg. chicken (drumstick)
  • flavored rice mix
  • 4 green onions, sliced
  • 12 pimiento stuffed green
  • olives, sliced
  • 1/2 c. green pepper, chopped
  • 2 (6 oz.) jars marinated
  • artichoke hearts
  • 3/4 tsp. curry powder
  • 1/3 c. mayonnaise
DIRECTIONS
  1. Cook rice according to package directions omitting
  2. butter. Cool. Add green onions, green peppers and olives.
  3. Drain artichoke hearts reserving marinade. Cut artichokes in
  4. half. Combine artichoke marinade with curry powder and mayon-
  5. naise. Add artichoke hearts to rice and toss with dressing.
  6. Chill. Serves 6 to 8.
