ROASTED WHITE AND SWEET POTATO MEDLEY

  • 3 pounds sweet potatoes and white potatoes, quartered (peeled if you choose). Cut the sweet potatoes slightly larger because they cook faster
  • 1/4 cup olive oil
  • Freshly ground sea salt to taste
  • Freshly ground black pepper to taste
  • 2 garlic cloves, minced
  • 2 medium shallots, chopped
  • 3 sprigs of fresh thyme
  • 4 sprigs of fresh sage
DIRECTIONS
  1. Pour olive oil into a large bowl. Add garlic, shallots, potatoes, and herbs. Mix well. Salt and pepper to taste. Spread out onto a rimmed baking sheet lined with parchment paper in a single layer. Roast in an oven preheated to 400F for about 45 minutes or until potatoes are browned and tender. Toss a couple of times to brown evenly. Remove herbs and discard, serve immediately.
