Rainbow Sandwich (beets, carrots, and cabbage)

  • 1/2 of carrots, finely grated (approx. 1-2 carrots)
  • 1/2 cup of beets, finely grated (approx. 1-2 beets)
  • 1/2 cup of grated cabbage
  • 1 pack of firm tofu (or your favourite protein, tempeh, etc.), that you will marinate and grill (you can forgo the marinade if you're making them quickly)
  • A few spoonfuls of Dragon sauce (see recipe below)
  • 8 slices of your favourite bread (pre-toast them if you want)
  • Alfalfa sprouts (optional)
  • A few lettuce leaves
  • 1/4 cup of nutritional yeast
  • 3 Tbsp olive oil
  • 2 Tbsp maple syrup
  • 2 Tbsp tamari (or soy sauce)
  • 2 Tbsp water
  • 2 tsp minced garlic (approx. 1-2 garlic cloves)
  • Press the tofu.
  • Cut it in 2 triangles. Now cut slices that you will marinade overnight in:
  • 1/4 cup olive oil
  • Juice of 1 lime
  • 1/4 cup tamari (or soy sauce)
  • 1 tsp minced ginger
  • 1 tsp minced garlic (approx. 1 clove)
  • A pinch of cayenne pepper
  1. 1. DRAGON SAUCE: Mix all ingredients in a food processor until well blended.
  2. 2. GRILL THE TOFU/PROTEIN OF YOUR CHOICE: Grill the marinated tofu in the oven (or BBQ) for 15-20 minutes- turning halfway.
  3. 3. ASSEMBLE THE SANDWICHES: Spread the Dragon sauce on two slices of bread. To one slice of bread, add the grated carrots, grated beets, grilled tofu, alfalfa sprouts and lettuce. Top with the other slice of bread. If you did not use pre-toasted bread, you can now warm your sandwich in a panini press (optional) to make it more fancy. Repeat for the other 3 sandwiches.
A great sandwich inspired by Aux Vivres' (great vegan restaurant in Montreal) Dragon sandwich. Use tofu or your favourite protein. Use your favorite bread (ideally toasted or warmed with a panini press to be fancy) or try making it in a flour/tortilla wrap (the way Aux Vivre serves it) or in pita bread. If you don't have nutritional yeast (now available in most grocery stores), you can use peanut sauce.
