Rancho Mashed Potatoes

  • 9 med. potatoes, peeled
  • 1 clove garlic
  • 1/4 c. melted butter
  • 2 egg yolks
  • 1/2 c. heavy cream
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1 (4 oz. can mushroom slices, drained
  • 2 Tb. butter
  • 1/4 c. finely chopped parsley
DIRECTIONS
  1. Cook potatoes in salted water with clove of garlic 'til just tender. Drain; remove garlic.
  2. Mash potatoes with 1/4 c. butter. blend in egg yolks, cream, salt and pepper.
  3. Cook mushrooms in 2 Tb. butter; add with parsley to potatoes and mix.
  4. Place in 3 qr. casserole. Bake at 375ยบ 35 min.
