Raspberry-Cheese Pie
  • Baked 9" pie shell
  • 1 (3 oz.) pkg. raspberry flavor gelatin
  • 2 Tb. sugar
  • 1 1/4 c. hot water
  • 1 (16 ox.) pkg frozen raspberries
  • 1 (3 oz.) pkg. cream cheese
  • 2 Tb. milk
  • sweetened whipped cream
  1. Dissolve gelatin and sugar in hot water. Add unthawed berries and stir to break them up. Gelatin thickens as berries thaw.
  2. Blend cream cheese with milk. Spread over bottom of cool pie shell.
  3. Pour partially set gelatin mixture over cheese in pie shell. Refrigerate until set.
  4. Serve garnished with spoonfuls of whipped cream.
I can tell you this pie is beautiful!! I usually add a couple of fresh raspberries on the whipped cream if they are available. The reaction is always half the fun of serving this to guests.
