Raspberry Chicken

INGREDIENTS
  • 2-4 boneless, skinless chicken breast
  • 1 can diced tomatoes
  • 1 Zuccini, thinly sliced
  • 1 yellow squash, thinly sliced
  • 1/2 cup Raspberry jam
  • 1 Tbsp balsamic vinegar
  • 1 Tbsp butter
  • 1 Tbsp garlic olive oil
DIRECTIONS
  1. Melt the butter and fry the chicken until light brown. Pour in the Raspbery vinagrette and simmer covered for about 15 minutes Add the tomatoes, Zuccine and Squash Simmer covered for another 5 minutes
