Red Potato Salad

  • 8-10 red potatoes
  • 3/4 c. Zesty Italian salad dressing
  • 1/3 c. celery, chopped
  • 1/4 c. green onion, thinly sliced
  • 1/3 c. sweet pickle, chopped
  • 1/2 - 1 c. mayonnaise
  • 5 hard cooked eggs, chopped
  • 1/2 c. crisp fried bacon, chopped
  • freshly ground sea salt to taste
  • freshly ground black pepper to taste
  1. Cut potatoes in quarters and put in large pot, cover with water and bring to boil. Lower heat to medium and cook until potatoes are just tender, about 20 minutes. Drain potatoes, and put back into pot on stove with heat off to dry potatoes. Meanwhile in a large bowl combine Italian salad dressing, celery, green onion, and sweet pickles, stir. Add potatoes and mash some, but not all. Add bacon, eggs, mayonnaise, salt and pepper to taste; stir well. Refrigerate until serving.
Our family loves bacon and hard cooked eggs in their potato salad. Combining the hot potatoes with the salad dressing gives a wonderful depth of flavor.
