Red Quinoa Salad

INGREDIENTS
  • 1 cup red quinoa
  • 1 1/4 cups vegetable broth
  • 1 onion chopped
  • handful of cilantro chopped
  • 1 red bell pepper diced
  • 1 roma tomato diced
  • 1 large lemon juice
  • dash of olive oil
  • salt and pepper to taste
DIRECTIONS
  1. In pot bring broth to boil and add quinoa.
  2. Cover and reduce to simmer for up to 12-15 minutes until liquid is absorbed and quinoa is tender.
  3. Let it cool, add rest of ingredients and mix.
