Red Quinoa Salad
  • 1 cup red quinoa
  • 1 1/4 cups vegetable broth
  • 1 onion chopped
  • handful of cilantro chopped
  • 1 red bell pepper diced
  • 1 roma tomato diced
  • 1 large lemon juice
  • dash of olive oil
  • salt and pepper to taste
  1. In pot bring water and quinoa to boil.
  2. Reduce and simmer for 20 minutes and cover.
  3. Drain and let it cool and add onion, cilantro, red bell pepper, tomato, lemon juice, olive oil and salt and pepper.
Red quinoa comes from the flowering plant Chenopodium quinoa, which is native to South America.
