Red Velvet Cake(with cream cheese frosting)

  • 1 1/2 cup butter, soft
  • 2 tsp. vanilla
  • 1 1/2 cup sugar
  • 2 eggs
  • 1 oz. red food coloring
  • 2 T cocoa
  • 1 tsp. salt
  • 2 1/3 cup flour
  • 1 cup buttermilk
  • 1 tsp. baking soda
  • 1 tsp. vinegar
  • 8 oz cream cheese, soft
  • 1 lb. confectioners sugar
  • 1 cup chopped nuts
DIRECTIONS
  1. Cream 1 cup butter and 1 tsp vanilla in bowl. Add sugar, 1/3 cup at a time, beating well after each addition.
  2. Stir in next 3 ingredients, mixing well.
  3. Add flour 1/3 cup at a time alternately with buttermilk, beating well after each addition, beginning and ending with flour.
  4. Combine soda and vinegar.
  5. Add to batter, mixing well.
  6. Pour into 3 prepared 8-inch round cake pans. Bake at 350° for 15-20 minutes.
  7. Cream remaining butter and cream cheese in bowl. Add 1 tsp. vanilla and confectioners sugar, mixing well.
  8. Stir in nuts.
  9. Spread between layers and over top of cooled cake.
