Red Velvet Cheesecake Brownies

  • Red Velvet Brownie Layer:
  • 113 grams of salted butter (I used Clover brand)
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup cocoa powder
  • A few drops of red gel colouring
  • 1 teaspoon vinegar
  • 2 eggs
  • 3/4 cup cake flour
  • Cream Cheese Layer:
  • 240 grams of cream cheese, softened ( I used Philadelphia)
  • 1/4 cup granulated sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  1. Brownie layer:
  2. Melt butter in a the microwave
  3. In a separate bowl add the sugar, vanilla, cocoa powder, gel food colouring, and vinegar.
  4. Mixing well with each addition
  5. Mix in the eggs (lightly beaten)
  6. Using a wooden spoon fold in the flour
  7. Pour the batter into a brownie pan ( I used a 25 by 18 cm pan)
  8. Keep aside about 1/2 cup of the batter
  9. Cream cheese layer:
  10. Mix together the cream cheese, sugar, egg, and vanilla until combined ( I used a hand held mixer - took about 3 minutes on medium speed)
  11. Using a spatula carefully spread the mixture on top of the brownie batter
  12. Then take the 1/2 cup of brownie batter and spoon same over the brownie batter
  13. Drag a cocktail stick through creating a nice swirl effect
  14. Bake at 175 degrees celcius for 30 to 35 minutes
  15. Once ready leave to cool completely before placing in the refrigerator overnight
  16. Dust with glitter before serving (optional)
  17. Enjoy
