Red Velvet Cupcake Recipe

- Ingredients:
- Two and a half cups flour
- 1 tsp baking soda
- Half tsp salt
- 1 cup butter
- 2 cups sugar
- 4 eggs
- 1 cup sour cream
- Half cup milk
- 1 oz red food colour
- 2 tsp vanilla extract
- For the frosting:
- 8 oz cream cheese
- 4 tbsp butter
- 2 tsp sour cream
- 2 tsp vanilla extract
- 16 oz caster sugar
DIRECTIONS
- Mix the flour, baking soda and salt. Beat the butter and sugar in a large bowl with an electric mixer on medium speed for five minutes or until light and fluffy.
- Beat in the eggs one at a time.
- Mix in the sour cream, milk, food colour and vanilla.
- Gradually beat in the flour mixture on a low speed until blended.
- Spoon the batter into paper-lined muffin cups, filling each cup two-thirds full.
- Bake in a pre-heated oven at 350F for 20-25 minutes.
- Allow to cool for five minutes.
- Remove from the pans and spread with frosting. Makes 30.
