Red Velvet Cupcake Recipe

  • Ingredients:
  • Two and a half cups flour
  • 1 tsp baking soda
  • Half tsp salt
  • 1 cup butter
  • 2 cups sugar
  • 4 eggs
  • 1 cup sour cream
  • Half cup milk
  • 1 oz red food colour
  • 2 tsp vanilla extract
  • For the frosting:
  • 8 oz cream cheese
  • 4 tbsp butter
  • 2 tsp sour cream
  • 2 tsp vanilla extract
  • 16 oz caster sugar
DIRECTIONS
  1. Mix the flour, baking soda and salt. Beat the butter and sugar in a large bowl with an electric mixer on medium speed for five minutes or until light and fluffy.
  2. Beat in the eggs one at a time.
  3. Mix in the sour cream, milk, food colour and vanilla.
  4. Gradually beat in the flour mixture on a low speed until blended.
  5. Spoon the batter into paper-lined muffin cups, filling each cup two-thirds full.
  6. Bake in a pre-heated oven at 350F for 20-25 minutes.
  7. Allow to cool for five minutes.
  8. Remove from the pans and spread with frosting. Makes 30.
