Refreshing summer soup
INGREDIENTS
  • Cooking Time: 1-2 hours (just chilling)
  • Servings: 2
  • Preparation Time: 10
  • 4 Tomatoes
  • 1 bell pepper
  • 1 cucumber
  • 1 red onion
  • 4 cloves garlic
  • 1 Tbsp universal herb mix
  • 1 handfull fresh mint leaves
  • 1 handfull fresh basil leaves
  • 2 cups water
  • salt & pepper
DIRECTIONS
  1. Dice tomatoes, bell pepper, cucumber and onion (about 1 inch)
  2. Put all ingredients in a blender and blend finely
  3. If the soup seems too thick, add more water
  4. Add salt and pepper to taste
  5. Let cool in the fridge for 1-2 hours.
RECIPE BACKSTORY
This soup may also be served hot. In this case I like to add about 1 cup of heavy cream after heating the soup.
