Rhubarb Cake

INGREDIENTS
  • 1 1/2 c. rhubarb, cut fine
  • 1/2 c. butter, no substitute
  • 1/2 tsp. salt
  • 1 tsp. soda
  • 2 c. flour
  • 1 1/2 c. brown sugar
  • 1 egg
  • 1 c. sour milk or buttermilk
  • 1 tsp. vanilla
DIRECTIONS
  1. Cream sugar and butter. Add egg and salt. Stir in sour milk, soda, vanilla and flour. Add cut rhubarb. Pour batter into 9 X 13" greased and floured cake pan. Sprinkle with mixture of 1/2 c. sugar, 1/2 c. fine coconut and 1 tsp. cinnamon over top. Bake at 375ยบ for 30 - 35 minutes.
