Rhubarb Cake

  • 4 c diced rhubarb
  • 2 c miniature marshmallows
  • 1 T strawberry jello
  • 1 3/4 c sugar
  • 1/2 c margarine
  • 2 eggs
  • 1 3/4 c flour
  • 1/2 t salt
  • 3 t baking powder
  • 1/2 c milk
  • 3/4 c sugar--for preparing pan
DIRECTIONS
  1. Butter a 9x13 pan and sprinkle 3/4 c sugar in the bottom.
  2. Place rhubarb in the pan, covered with marshmallows, then sprinkled with jello. Cream 1 3/4 c sugar and margarine until smooth. Add eggs. Add sifted dry ingredients then milk. Pour over rhubarb and bake 30-40 minutes in 350 degree oven.
