Rhubarb Coffee Cake

INGREDIENTS
- 1/2 cup shortening
- 1 1/2 cups sugar
- 1 egg
- 2 cups flour
- 1 teaspoon baking soda
- 1 teapoon vanilla
- 1 cup buttermilk
- 1 1/2 diced rhubarb
- Topping:
- 1/2 cup sugar
- cinnamon
DIRECTIONS
- Blend together the shortening, sugar, egg and flour. Add in the soda, vanilla, buttermilk and rhubarb. Mix well and put in a greased 9x13 pan. Sprinkle with sugar and cinnamon topping.
- Bake at 350F for 45 min.
