Rhubarb Dessert

  • Crust:
  • 1 1/2 c flour
  • 7 T powdered sugar
  • 3/4 c margarine
  • Filling:
  • 4 c rhubarb, sliced thin
  • 1 1/2 - 2 c sugar
  • 1 t vanilla
  • 1/3 c flour
  • 3 eggs, beaten
  • dash of salt
  • 1 can evaporated milk
DIRECTIONS
  1. For crust: crumb and pat ingredients into ungreased 9x13 pan. Bake at 325 for 15 minutes. Sprinkle 4 c rhubarb on hot crust. Mix the remaining ingredients and pour over rhubarb. Sprinkle top with cinnamon before baking. Bake at 325 for 40-45 minutes.
