Rice Parmigiana
  • 2 cup White Rice, Cooked
  • 1 cup Fresh Parsley, Coarsely Chopped
  • 1/4 cup Green Onions, Chopped
  • 1 cup Parmesan, Grated
  • 2 Eggs, Lightly Beaten
  • 1/4 cup Milk
  • 1/2 tsp Salt & Pepper
  • 4 oz Mozzarella Cheese, Sliced Or Shredded
  • Tomato Slices
  1. Oven Temperature: 350°F
  2. *Mix the cooked rice with the parsley, green onions, and parmesan cheese; Beat the eggs and milk together thoroughly and mix into the rice
  3. *Add salt & pepper and blend well
  4. *Turn into well buttered 1 to 1/2-quart dish that has a cover
  5. *Arrange half the cheese over the rice; arrange tomato slices over cheese and top with rest of cheese
  6. *Place in a pan of boiling water; bake at 250 degrees for 30-35 minutes, or until casserole is set
