Rice Pudding

INGREDIENTS
  • 1 1/2 cups cooked rice
  • 2 cups milk, divided
  • 1/4 teaspoon salt
  • ⅔ cup golden raisins
  • 1 egg, beaten
  • ⅓ cup white sugar
  • 1 tbsp butter
  • 1/2 teaspoon vanilla extract
DIRECTIONS
  1. Combine cooked rice, 1 1/2 cups milk, and salt in a saucepan over medium Heat; cook and stir until thick and creamy, 15 to 20 minutes.
  2. Stir remaining 1/2 cup milk, golden raisins, beaten egg, and white sugar into the rice mixture; stirring continually.
  3. Continue cooking until egg is set, two to three minutes.
  4. Remove the saucepan from Heat; stir butter and vanilla extract into the pudding.
