Rich Fudgy Brownies

INGREDIENTS

  • 8 oz. (1 cup) unsalted butter; additional for the pan.
  • 3 oz. (2/3 cup) unbleached, AP flour; additional for the pan (I dust with cocoa)
  • 2 cups granulated sugar (14 oz)
  • 4 large eggs, room temp.
  • 1/2 teaspoon pure vanilla extract
  • 2 1/2 oz. (3/4 cup) unsweetened natural cocoa powder
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon table salt
DIRECTIONS
  1. Position rack in center of the oven and preheat to 350*.
  2. Butter and flour a 9 inch square pan.
  3. Melt the butter in a medium saucepan over medium heat. Remove the pan from the heat.
  4. Whisk in the sugar, 4 eggs, and vanilla.
  5. Stir in the flour, cocoa, baking powder, and the salt. Stir batter until batter is smooth and uniform ~ 1 minute.
  6. Spread batter into baking pan and smooth out the top.
  7. Bake till toothpick comes out with a few moist clumps clinging to it, about 40 minutes.
  8. Cool completely in pan on a rack before cutting.
