Rigatoni with Turkey Sausage
  • Servings: 6
  • 1 1lb. box of Rigatoni
  • 1 pound of Italian Turkey Sausage links, cut in to slices
  • 4 vine ripened tomatoes
  • 1 ball of fresh mozzarella cheese
  • pepper to taste
  • fresh basil leaves
  1. Boil a large pot of water and cook the Rigatoni according to package directions. In a skillet, brown and cook thru the turkey sausage. When they are done, drain on paper towel. As everything is cooking, dice the tomato and cheese and set aside.
  2. Drain the pasta and retrn to the pot. Add the cooked, drained sausage, tomato and mozzarella. Season with fresh pepper and fresh basil leaves. Toss until cheese is just melted.
  3. Makes about 6 servings
