Rillettes from walnuts and blue cheese

  • 200 grams of roquefort (or another blue cheese)
  • 75 grams of mascarpone
  • 50 grams walnuts, roasted in a dry skillet, cooled and roughly chopped
  • 6 dried figs, chopped in small pieces
  • 2 tablespoons of dried raisins
  • 2 tablespoons of port wine
  • crushed black pepper corns
  1. Soak the raisins in the port wine for a couple of hours
  2. Mix all of the ingredients into a bowl
  3. Then put it in a glass jar and allow the different tastes to blend together for 20 to 24 hours
  4. Serve on toast
