Rise & Shine Eggs

  • 6 slices salt reduced, low fat leg ham (optional)
  • 9 large free range eggs, beaten
  • 1/2 cup skim milk
  • 1/8 teaspoon salt
  • 1/4 teaspoon white pepper
  • 4 teaspoons margarine
  • 6 wholemeal muffins, split and toasted
  • 1 large ripened tomato, sliced
  1. Preheat oven to 150C. Wrap ham in foil; warm in oven for 10 minutes.
  2. In a saucepan, cook cottage cheese mixture over a medium heat, stirring, until thickened, about 4 minutes. Remove form heat. Stir in Parmesan cheese and lemon juice. Cover and keep warm.
  3. In a bowl, mix eggs, milk, salt and pepper. In a non stick frying pan, melt margarine over a medium low heat. Add the egg mixture; cook, stirring constantly, until set, about 5 minutes.
  4. Top muffins with ham and tomato; spoon egg mixture and sauce on top. Serve.
