Risotto

  • 1 cup sliced, fresh mushrooms
  • 2/3 cup long-grain rice
  • 1/3 cup chopped green pepper
  • 2 Tbsp. margarine or butter
  • 1 cup chicken broth
  • 1/2 cup water
  • 1/4 Tsp. dried sage, crushed
  • 1/8 Tsp. pepper
  • 2 Tbsp. grated parmesan cheese
DIRECTIONS
  1. 1. in a medium saucepan, cook mushrooms, rice, and green pepper in margarine until green pepper is tender; remove from heat
  2. 2. stir in broth, water, sage, and pepper, bring to a boil, reduce heat
  3. 3. cover and simmer for about 15 mins or until tender
  4. 4. remove fro heat
  5. 5. let stand, covered, for 5 mins; fluff with a fork and sprinkle with cheese
